Lemon and Fennel Iced Tea

This refreshing drink is flavored with fennel seeds, fresh lemon juice and zest, and is sweetened with honey.

Lemon and Fennel Iced Tea

Ingredients
  • 4 cups water
  • 1/2 cup honey or to taste
  • 1 tablespoon fennel seeds
  • 4 orange pekoe tea bags
  • 3 3- inch long strips of lemon zest yellow part only, removed with a vegetable peeler or paring knife
  • 6 tablespoons fresh squeezed lemon juice
Instructions
  1. Stir the water, honey, and fennel seeds together in a saucepan, and bring to a boil. Remove from the stove, and add in the tea bags and lemon zest strips. Steep for 5 minutes.
  2. Strain the tea into a heat-proof pitcher, and let it cool.
  3. Add in the lemon juice.
  4. Chill for at least one hour, or until very cold. Sweeten the tea more if needed.
  5. Serve over ice.
