Tropical Salsa with Mango, Pineapple, and Red Pepper

Ingredients

ripe mangoes
cubed

cup
fresh diced pineapple
1
roasted red bell pepper
skinned, seeded, and chopped
1
roasted Anaheim pepper
skinned, seeded, and chopped
1
small bunch of cilantro
cleaned and chopped
1/2
cup
chopped red onion
1
large garlic clove
minced
2
tablespoons
corn oil
1
lime
for juice
Salt and pepper to taste
Instructions
Place all the ingredients in a bowl, tossing to mix. Season to taste with salt and pepper.
