Watermelon Agua Fresca

Ingredients
  • 1 ripe red seedless watermelon about 12 pounds
  • 4 limes juiced
  • 3/4 cup sugar
  • 1 cup fresh mint leaves crushed, plus sprigs for garnish
  • 4 cups sparkling water
  • 3 limes thinly sliced
  • 2 quarts ice cubes
Instructions
  1. Cut the rind from the watermelon and puree the flesh in a food processor or a blender. Transfer to a large bowl as it is being pureed.
  2. Add in the lime juice, sugar, and mint leaves. Cover; let stand at room temperature for up to 3 hours.
  3. Strain the liquid into a large beverage container. Add in the sparkling water, lime slices, and ice. Serve the watermelon agua fresca with fresh mint sprigs.
