Lemon Herb Vinaigrette

A basic herb vinaigrette using parsley, chives, and lemon thyme. Great for drizzling over a garden salad or fresh baked fish before serving.

Ingredients
  • 1/2 cup vegetable oil
  • 3 tablespoons fresh squeezed lemon juice
  • 1/2 to 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fine parsley
  • 1 teaspoon chopped fine chives
  • 1/2 teaspoon chopped fine lemon thyme
  • Salt and pepper to taste
Instructions
  1. Whisk the oil, lemon juice, mustard, and herbs together until smooth.
  2. Season with salt and pepper to taste.
  3. Serve.
