Fresh Gingerroot Limeade

Ingredients
  • 3 1/2 cups water
  • 3/4 cup sugar or to taste
  • 2 tablespoons minced fresh gingerroot
  • 1 cup fresh lime juice
  • Lime slices for garnish
Instructions
  1. Combine 2 cups water, sugar, and the gingerroot in a saucepan set over high heat. Bring to a boil, stirring constantly to dissolve the sugar, and then reduce heat to a simmer. Simmer for 3 minutes.
  2. Strain through a chinois set over a bowl, and cool completely.
  3. Combine the ginger syrup, remaining water, and the lime juice together in a pitcher. Stir well.
  4. Serve over ice, and garnish the glasses with lime slices.
